Herby Roasted Sweet Potatoes, Onions & Cauliflower

(+Grilled & Braised Chicken Thighs)

REHEAT INSTRUCTIONS: Dress salad, Enjoy cold!

Heat Veggies in a 350 oven, covered in foil for 15-20 minutes until heated throughout.

Heat Chicken thighs in a 250 oven, covered in foil for 15-20 minutes until heated throughout.


Meal #2

Beyond Meatballs with Red Sauce (OR Turkey Meatballs)

Twice Baked Ziti with Broccoli Rabe, Zucchini & Cannelini Beans

OR Zucchini Noodles with Broccoli Rabe & Cannelini Beas

REHEAT INSTRUCTIONS: Heat Meatballs in a 350 oven, covered in foil for 15-20 minutes

Heat Pasta in a 350 oven, Uncovered, for 20-30 minutes until heated throughout and top is crisping up!

Heat Zucchini Noodles in a 350 oven, covered with foil, for 10-15 minutes until just heated throughout.


Meal #3

Tamari Ginger Tofu with Bok Choy (OR Beef)

Super Grain Pilaf

REHEAT INSTRUCTIONS: Heat Tamari Ginger Tofu (Or Beef) in a large sautepan or saucepot over medium heat, stirring frequently.

Heat Pilaf in a 350 oven, covered for 15-20 minutes.


Meal #4

Stuffed Portobello Mushrooms with Lentils, Hemp Hearts, Tomato & Nutritional Yeast

Coconut "Creamed" Greens with Shallot, Ginger & Garlic

Cashew Crema

REHEAT INSTRUCTIONS: Heat Portobellos in a 350 oven, covered in foil for 15-20 minutes

Heat Creamed greens the same way!

Enjoy with Chilled or room temperature crema.


Meal #5

Minestrone Soup with Tomato, Rancho Gordo Cicerchia Beans & Green Beans

REHEAT INSTRUCTIONS: Heat Soup in a saucepot over medium low heat, stirring often until heated throughout. Soup can be frozen, just be sure to remove some first to leave room for expansion!
