Meal #1
Spanikopita - Dark Leafy Greens & Gigante Bean Pie
Arugula Salad with Fennel, Tomato & Lemon & Dill Vinaigrette
REHEAT INSTRUCTIONS: Reheat spanikopita in a 325 oven uncovered for 10-15 minutes until heated throughout.
Run warm water around container with the salad dressing, or leave at room temp for 30 minutes or so, so that the olive oil liquifies. Dress salad and enjoy!
Meal #2
Buddha Bowl - Quinoa, Mixed Greens, Broccoli, Tomato, Green Beans, Garlicky Cucumbers & Peanut Sauce
+Arctic Char
REHEAT INSTRUCTIONS: Plate Buddha bowl with mixed greens and dress with peanut sauce.
If adding arctic char, heat in a 350 oven, uncovered for 7-9 minutes until just warmed through.
Meal #3
Vegan Caesar with Asparagus & Radishes, Hemp & Cashew Crumble, Caesar Dressing
with Crispy Baked Tofu or Whole Roasted Chicken
REHEAT INSTRUCTIONS: Dress caesar and add crumble.
To heat Tofu: Spread on a tray and heat in a 350 oven for 5-7 minutes.
To heat Chicken: Cover with foil and heat in a 350 oven for 15-25 minutes until heated throughout.
Meal #4
Harissa Roasted Eggplant & Cauliflower, Homemade Tahini Hummus, Sprouts, & Beyond Lamb Kebabs, (Or +Lamb Kebabs)
REHEAT INSTRUCTIONS:
Remove sprouts from container and set aside, Heat Eggplant/Cauliflower in a 350 oven, covered with foil for 7-10 minutes.
Add sprouts once it’s hot.
Remove Hummus from the fridge 30 minutes prior to eating so it can come to room temp.
Heat Kebabs uncovered in a 350 oven for 10-15 minutes until heated throughout.
Meal #5
Spring Veggie Soup with Miso & Barley
REHEAT INSTRUCTIONS: Heat Soup in a saucepot over medium low heat, stirring often until heated throughout. Soup can be frozen, just be sure to remove some first to leave room for expansion!
