Meal #1

Beet Poke with Seaweed Salad, Cucumber, Edamame, Pickled Carrots & Korean Sesame Tofu

Steamed Forbidden Black Rice

  • REHEAT INSTRUCTIONS: Heat Black Rice in a 350 oven, covered with foil for 10-12 minutes. Or microwave rice in a bowl, covered with a damp paper towel. Serve warm rice with everything else chilled.


Meal #2

Whole Heart “Cassie Bowl”: Roasted Eggplant, Sweet Potato, Currants, Turmeric Pickled Cauliflower, & Currants with Harissa Dressing & Crispy Chickpeas over Baby Kale & Quinoa

Miso Lemon Tofu (OR Braised Lemony Chicken Thighs)

REHEAT INSTRUCTIONS: This dish is meant to be eaten chilled. If you want the Tofu warm, you can remove it and heat it in a saute pan over medium heat for 1-2 minutes each side.

Chicken Thighs: Cover with foil and heat in a 350 oven for 20-25 minutes.


Meal #3

Taco Night! Grilled Veggies (+Grilled Ribeye), Avocado & Tomatillo Salsa, Cabbage & Onion Slaw, Homemade Flour or Organic Corn Tortillas

  • REHEAT INSTRUCTIONS:

  • Heat Veggies (or Veggies + Steak) in a 350 oven uncovered for 12-15 minutes until heated throughout.

  • Cook tortillas according to package instructions and keep them warm by wrapping them in a clean kitchen towel.

  • Serve tacos with slaw and salsa!


Meal #4

Roasted Mushroom & Asparagus Orzo Salad

Braised Lentils with Leeks, Carrots & Celery

(+Grilled Mustard Glazed Salmon)

  • REHEAT INSTRUCTIONS: Heat Lentils in a 350 oven, covered with foil for 15-20 minutes

  • Once lentils are hot, put salmon back on top of the lentils, and heat without foil for an additional 7-9 minutes until Salmon is just heated through and cooked to the temperature of your liking.

  • Orzo salad can be eaten chilled or room temp.


Meal #5

Chickpea & Vegetable Soup with Lemon and Dill

  • REHEAT INSTRUCTIONS: Heat Soup in a saucepot over medium low heat, stirring often until heated throughout. Soup can be frozen, just be sure to remove some first to leave room for expansion!
