Meal #1
Black Bean, Quinoa & Zucchini Burgers, Lettuce, Cucumbers, Sprouts, Sumac Onions & Coconut Tatziki (OR Turkey & Zucchini Burgers)
Roasted Carrots with Turmeric, Ginger & Pepita Crumble
REHEAT INSTRUCTIONS: Reheat Burgers in a 350 oven, uncovered for 8-10 minutes. Place in a lettuce wrap and top with cucumbers, sprouts, sumac onions & tatziki.
Serve carrots on the side cold OR Heat in a 350 oven covered with foil for 10-15 minutes.
Meal #2
Tempeh (Or Chicken), Chickpea & Veggie Piccata, Artichokes, Zucchini & Mushrooms
Quinoa
REHEAT INSTRUCTIONS: Heat piccata in a saute pan over medium heat stirring frequently until heated throughout. Add a few splashes of water as you are heating. Quinoa can be microwaved on a seperate plate OR heated in a 350 oven for 10-12 minutes, uncovered.
Meal #3
Whole Roasted Provencal Eggplant with Tomato, Herbs de Provence, Roasted Fennel, Gigante Beans & Shallots
Greens Salad with Endive, Radicchio, Radishes & Sherry Vinaigrette
REHEAT INSTRUCTIONS: Heat Eggplant, Fennel & gigante bean mixture in a 350 oven, covered in foil for 25-35 minutes until heated throughout.
Toss Salad with Vinaigrette and enjoy!
Meal #4
Stir Fried Scallion & Ginger Tofu (or Beef) with Bok Choy, Napa Cabbage & Waterchestnuts
Steamed Rice
Chilled Sesame Spinach
REHEAT INSTRUCTIONS: Heat Stir Fry in a saute pan over medium heat stirring frequently until heated throughout.
Steamed Rice can be microwaved on a separate plate with a wet paper towel on top, OR heated in a 350 oven for 10-12 minutes, covered with foil.

Red Lentil Dal with Almond Crumble & Lime
REHEAT INSTRUCTIONS: Heat Dal in a saucepot over medium low heat, stirring often until heated throughout. Top with Almond Crumble & Squeeze Lime To taste.
