Hoppin John’s- Sea Island Red Peas & Carolina Gold Rice
Braised Collard Greens with Apple Cider Vinegar
REHEAT INSTRUCTIONS: The Hoppin John’s are like a protein packed risotto! Heat them in a skillet over low heat, stirring constantly, and adding a few splashes of water to rehydrate a bit!
Heat Collard Greens in a saute pan or saucepot over medium heat, stirring frequently until heated throughout.
Meal #2
Grilled & Braised Tofu with Peppers, Onions, Ginger, Basil & Tomato (Or +Steamed Cod)
Quinoa & Caramelized Onion Pilaf
REHEAT INSTRUCTIONS: Cover Tofu & Peppers with Foil and Place in a 350 oven, Heat for 15-20 minutes until heated throughout.
Cover Cod & Peppers with Foil and Place in a 350 oven, Heat for 20-25 minutes until heated throughout and the fish no longer looks Translucent, but Opaque.

Grain Bowl with Farro, Arugula, Grilled Broccoli, Edamame, Cucumber, Red Cabbage, Crispy Chickpea & Sesame Crumble, & Orange Miso Dressing
(+ Grilled & Marinated Chicken Thighs)
REHEAT INSTRUCTIONS: Grain Bowl is meant to be eaten salad style, no need to heat, just add your dressing & Crumble and toss all together!
Chicken thighs can be heated in a 350 oven, covered with foil for 10-15 minutes until heated throughout. Alternatively, they could be eaten cold or microwaved.

Beyond “Lamb” & Zucchini Kebabs (Or Braised Lamb Shoulder Chops & Zucchini )
Chermoula Roasted Cauliflower, Green Beans, Pinto Potatoes & Onions, Creamy Tahini Sauce
REHEAT INSTRUCTIONS: Cover Beyond Lamb & Zucchini Kebabs with Foil & Heat in a 350 oven for 15-20 minutes until heated throughout.
Cover Braised Lamb & Zucchini with Foil & Heat in a 350 oven for 15-20 minutes until heated throughout.
Cover Roasted Veggies with Foil and Heat in a 350 oven for 8-10 minutes until heated throughout.
Serve with tahini sauce on the side!

Black Bean Soup with Crispy Tortilla Strips, Pickled Radish, Avocado & Lime
REHEAT INSTRUCTIONS: Heat Soup in a saucepot over medium low heat, stirring often until heated throughout. Top with Tortilla Strips, Pickled Radish, Avocado & Squeeze Lime to taste!
