Meal #1

Tomato & Eggplant “Buttery” Baked Pasta with Chickpeas

Winter Greens Salad with Fennel, Radish, Candied Hazelnuts & Meyer Lemon Vinaigrette

  • REHEAT INSTRUCTIONS: Cover pasta in Foil, heat in a 350 oven for 20-30 minutes until warmed throughout, remove foil and cook another 5-10 minutes until sides of the pasta begin to get crispy and the “cheese” caramelizes

  • For the Salad, Toss all together with vinaigrette and candied hazelnuts, ENJOY!


Meal #2

Tamari Ginger Tofu (or Chicken) with Bok Choy

Super Grain Pilaf

  • REHEAT INSTRUCTIONS: Heat the tamari ginger tofu (or chicken) in a large Skillet over medium high heat, stirring occasionally, until heated throughout

  • Pilaf can be reheated in a 350 oven (covered) for 15-20 min. Or microwave!


Meal #3

Taco Kits: Veggie Asada OR (+ Grass Fed Carne & Veggie Asada)

Flour or Corn Tortillas

Guacamolillo (Tomatillo and Avocado Salsa)

Quinoa with Black Beans

Escabeche Pickled Onions, Carrots & Jalapeños

  • REHEAT INSTRUCTIONS: Cook Tortillas according to package instructions, Keep them warm by wrapping them in a clean kitchen towel until you are ready to eat.

  • Heat Asada in a 375 oven, uncovered for 15-20 minutes, until desired temperature of meat, or until veggies are warmed throughout.

  • Heat Quinoa and black beans, covered with foil in 375 oven 10-12 minutes, until warmed throughout.

  • Build your tacos!


Meal #4

Sambal Spiced Tofu OR (+ Chicken)

Coconut Rice

Peanut Sauce

Cucumber Relish

  • REHEAT INSTRUCTIONS: Heat Sambal Tofu (or chicken) & rice in a 350 oven, covered with foil for 15-20 minutes, until heated throughout.

  • Serve with Peanut Sauce & Cucumber Relish on the side.


Meal #5

Pumpkin, Kale & Black Eyed Pea Soup

  • REHEAT INSTRUCTIONS: Heat Soup in a saucepot over medium low heat, stirring often until heated throughout.

  • This Soup can be frozen, but make sure to remove some from the glass to make room for expansion in the freezer!
