Meal #1
Baked Pasta, White Beans, Sundried Tomato, & Broccoli Rabe, Vegan Mozzarella (Or +Ricotta & Mozzarella)
Beyond Beef Meatballs OR (+ Chicken Meatballs) in Tomato Sauce
REHEAT INSTRUCTIONS: Heat Baked pasta in a 350 oven, uncovered for 20-25 minutes until pasta is fully warmed through and cheese starts to brown.
Heat Meatballs in a 350 oven, covered with foil for 10-15 minutes until warmed throughout.
Meal #2
Lemony Chickpea, Carrot & Leafy Greens Stew
Jasmine Rice
Crispy Spice Roasted Chickpeas
REHEAT INSTRUCTIONS: Heat Stew in a saucepot over medium high heat, stirring occasionally
Heat Jasmine Rice in the microwave (on a different plate), covered in a wet paper towel.
Serve stew with Rice and top with Crispy Chickpeas (crispy chickpeas do not need to be kept in the fridge)
Meal #3
“Cheesy” Polenta with Wild Mushroom Bourguignon (+Braised Grass Fed Beef Bourguignon)
REHEAT INSTRUCTIONS: Polenta can be heated uncovered in a 350 oven, uncovered, for 20-30 minutes for a “crispy” Polenta, OR Heat in a saute pan with a bit of water over medium heat, stirring frequently for a creamy polenta!
Heat the mushroom Bourguignon either covered in a 350 oven for 15-20 minutes, or in a saute pan over medium heat, stirring frequently.
Meal #4
Sweet & Sour Cauliflower (Or “Sweet and Sour Chicken)
“Fried” Brown Rice & Quinoa with Tofu, Edamame, Carrots, Peas & Scallion
REHEAT INSTRUCTIONS: Heat Sweet and Sour Cauliflower (or chicken) in a 350 oven, covered in foil, for 10-12 minutes
Heat Fried Rice in a 350 oven, uncovered, for 15-20 minutes.
Meal #5
Red Lentil Dal, Curry Leaf Tadka
REHEAT INSTRUCTIONS: Heat Dal in a saucepot over medium low heat, stirring often until heated throughout.
The Dal can be frozen, but make sure to remove some from the glass to make room for expansion in the freezer!
Tadka does not need to be refrigerated, top the dal with tadka once it is plated!
