Meal #1
Brown Rice & Quinoa Bowl with Japanese eggplant, Turmeric Roasted Cauliflower & Chickpeas, Salsa Verde (+ Grilled Arctic Char)
REHEAT INSTRUCTIONS: preheat oven to 350 degrees, Heat the Grain Bowl (remove lid first) for 12-15 minutes, until heated throughout. Warm Salsa Verde under warm water in the container, or bring to room temperature by pulling out of the fridge 30 minutes before serving. Mix well and spoon Salsa Verde over your Grain Bowl!
ARCTIC CHAR: preheat over to 350 degrees. Heat Arctic Char for 7-10 minutes until heated throughout.
Meal #2
Spinach & Tofu Ricotta Stuffed Shells, Zucchini, Tomato Sauce, & Plant Based Mozzarella. Garlicky Roasted Broccoli Rabe
REHEAT INSTRUCTIONS: preheat oven to 350 degrees, Cook the Stuffed Shells covered with foil for 15-20 minutes, until tomato sauce is bubbly and cheeze is Melty. Remove foil, and heat for 5-7 more minutes or so until the cheese gets a bit crispy and brown! The timing may vary depending on your oven, so check it every 2-3 minutes after the initial 15 please!
Heat Broccoli Rabe for 7-10 minutes in 350 oven.
Meal #3
Thai Green Curry Veggies & Tofu (or Chicken) - Green Beans, Bamboo Shoots, Waterchestnuts, Zucchini, Bell Peppers. Jasmine Rice & Sweet Potato with Lime Zest
REHEAT INSTRUCTIONS: preheat oven to 350 degrees, Cover Green Curry with foil, and bake for 20-25 minutes until heated throughout. Same for the rice/sweet potato!
Alternatively, you could microwave this meal (in a different container) or heat on the stovetop in a sauté pan!
Meal #4
Lentils, Peppers and Onions, with Ginger & Tomato. Orzo Salad with Spinach, Herbs & Olives. (+ Mustardy Roasted Pork Tenderloin)
REHEAT INSTRUCTIONS: Heat Lentils in a saucepot over medium heat, stirring occasionally until boiling.
Mix Orzo salad well with the Spinach underneath
Optional Pork Loin: Preheat Oven to 350, Heat pork loin, uncovered, for 7-10 minutes until heated throughout.
Meal #5
Split Pea Soup with Barley & Carrots
REHEAT INSTRUCTIONS: Heat Soup in a saucepot over medium low heat, stirring often until heated throughout.
This soup can be frozen, but make sure to remove some from the glass to account for expansion in the freezer!
